You can just use a piece of paper! Put a central idea in the middle, and start branching out with ideas, then make sub branches off of those. There are several software programs available if you want to get fancy--just search for Mind Mapping.

Tony Buzan's The Mind Map Book is pretty detailed, but I learned a lot from it. I use it for myself as I'm a grad student, but I also use it with my students (as I'm also a teacher) with much success.
